The heart of the hotel is the plantation house, a historic structure that’s full of eclectic furnishings that work together perfectly to create a wonderfully rustic atmosphere. The sounds of the unspoilt rainforests create a melodic soundtrack and exotic birds swoop between tropical trees as you laze by the pool or follow the spice trail that winds its way through the plantation.

Meals are served in Edge Restaurant. Cuisine here is wonderfully fresh and is created using ingredients from the plantation itself, or from local suppliers. Catch-of the-day seafood is sourced from Gouyave, a local fishing port. If you are staying in the Spice House, you can cook your own meals or hire a chef to create delicious dishes for your whole family. The Great House is also home to the Little Bamboo Bar, where tropical drinks and sparkling wines are served alongside other drinks.

A stay in the northern reaches of the island gives you the chance to experience a more traditional side of life and there are a handful of activities that allow you to explore. You can head off on tropical rainforest hikes and learn about the flora and fauna or visit local villages that have remained unaffected by the tourism boom further south. While visits this far north are less fly and flop, there’s a small plunge pool at the plantation which has views for days (and it’s the best place to view those renowned Caribbean sunsets from too).
